I was wandering around Whole Foods a few weeks ago and was in the baking aisle checking out the flours. Coconut flour jumped out at me and without knowing what to do with it I brought one bag home. Well turns out it was a great decision! Organic coconut flour is a healthy alternative to wheat and other grain flours. It’s gluten free and is ideal for a paleo diet. I googled a few recipes and started baking and the results were delicious! Here are the few that were a hit in our house.
1. Coconut flour chocolate chunk bars (Ambitious Kitchen)
2. One bowl coconut flour brownies (Cook, Eat, Paleo)
3. Coconut flour pancakes with almond butter and blackberry sauce (Civilized Caveman Cooking)
4. Chocolate chip coconut flour banana bread, I made this a week ago and it was delicious! (Ambitious Kitchen)
Thanks for compiling these recipes for us. I’m going to start using coconut flour. I think the chocolate chunk bars will be a major hit among my family.
