I want to perk up my standard paper bag lunches with fresh, tasty alternatives. In the last year, I have changed my diet, granted I ate somewhat healthy before; I blame my weight gain on laziness, lack of portion control and exercise. I threw out all our junk food and introduced clean eating.
Up to now, in one year, I have lost 30lbs. I cannot believe I had that much to lose in the first place, but alas I did. I still am hoping to lose another 10lbs in order to reach my goal weight. In doing so, I have cut out dairy, carbs, and sugar on a daily basis, indulging periodically because hey, life is too short not to! In doing so, I find myself more energized, I don’t need that afternoon nap on a regular basis, and bloat is non-existent.
Below are a few links to some recipes I bookmarked to try in the upcoming weeks.
I love pesto & chicken so this Two-pea pesto chicken salad recipe sounds amazing! (Food52)
I just bought a vegetable spiralizer and need to try this Zucchini Noodles with tomatoes and corn (The Kitchn)
Spring rolls, need I say more? (Shutterbean)
If quinoa gets boring, try this Tabbouleh with Chicken and Red Pepper salad (Cooking Light)
A delicious Cumin Lime Black Bean Quinoa Salad (Oh She Glows)
What are your lunches for work? Have you changed your diet lately?
