The other day I had cilantro and sweet limes in my fridge. I knew I had to use them up and wanted to try something different. So like any sensible person would think, I went with a cocktail. This Sweet Lime Ginger Rum Cocktail was an easy recipe.
I made the ginger simple syrup which can also be used in other cocktail recipes. It’s so much better when it’s freshly made instead of buying it. I imagine this drink too served up in a large pitcher on a hot summer’s day, best enjoyed with friends. Or by yourself, however you roll! Truth, I drank mine and then while Curtis was busy and forgot his, I also drank his. Can’t let it go to waste, can I?
It was a really refreshing cocktail to sip. I found out I love cilantro even in cocktails! I have mentioned before that I have a recent addiction to this herb and well now it’s at another level. I would also say you could use mint too in this recipe. It then might take on a more moscow mule flavour profile with the ginger and lime juice, but hey that also sounds really delicious.
I went with half limes and half sweet limes this time, but if you had more than two sweet limes in your fridge, then go with all of those! Or use only limes when sweet limes aren’t in season. Equally good. But do make sure you use a dark rum for this. That is an essential aspect to this cocktail. I wouldn’t recommend using anything else.
The ingredients looked so pretty together! I had to take a picture of them. The fragrance from the freshly squeezed limes smelt like summer! I had visions sipping these pre-dinner in the summer, in a dress, without a jacket or raincoat! I’m pretty sure the Groundhog lied this year, or else it’s going to be a very wet spring here in Vancouver.

A restaurant once made me a cilantro lemonade when I asked them for a nice mocktail, and I was pleasantly surprised by how well the combination of lemon and cilantro works. I can just imagine how delicious it would be in cocktail form with the addition of ginger and dark rum… sounds like the perfect drink for patio sipping once the weather warms up!
yes, i think it’s the acidity with it. why it makes a great topping in latin food too.
