In the course of making cocktails, we try to make a lot of our own ingredients from scratch. One of our favorites to make is simple syrup. A Classic Simple Syrup can be an integral part of a cocktail, by adding sweetness and flavor to make the drink just right. We have made a lot of simple syrups out of herbs, fruit, and other sugars. To me, homemade simple syrup just tastes better, is less artificial, and is so easy to make!
Simple syrups can be infused with anything you can think of, so use your imagination and come up with your own unique flavors!

Bring the water to a boil.
Add sugar, stir to dissolve.
Add the rosemary spears, let the infusion boil for 60 seconds.
Remove pan from heat and let steep for 30 minutes-1 hour depending how strong you would like it.
Pour the cooled syrup through a mesh strainer into an airtight container, preferably glass.
This may be stored in the fridge for up to 2 weeks.
They can get moldy if they sit too long. I encourage you to store it in the fridge in a jar or bottle, but for no more than two weeks.
