One of the things I love most about summer is the excuse to have ice cream floats! Brings me back to my childhood. As an adult I still love them and look for any excuse to make one at home. My Pineapple and Coconut Gelato Float is a delightful, tropical spoonful.
If I have ice cream, I tend to make an affogato, which is hot espresso poured over a scoop of ice cream. Really delicious but probably mostly for coffee lovers.
This Pineapple and Coconut Gelato Float is really easy and simple to make, literally take a few minutes. Most of that is blending the pineapple and straining it. You can either buy the pineapple already sliced or diced fresh or frozen. I can’t bother with the struggle of doing that myself. I did find out the secret recently on how to cut a pineapple and will share that in a video soon.
Pick a great coconut gelato, you can find that in most grocery stores now or at a local gelateria if you are lucky. Feel free to substitute it with homemade coconut ice cream (using this awesome ice cream maker!) or any ice cream if you want. I love coconut gelato and the combination of coconuts and pineapples. If a cocktail includes either or both of those two ingredients, I’m ordering it.
I also recently bought this ice cream scoop since it’s comfortable to hold and rolls out the ice cream or gelato smoothly. Sometimes you get those other scoops and the ice cream or gelato stick to it. One of my pet peeves in life.
I suggest making my Pineapple and Coconut Gelato Float this weekend. Kick back and enjoy it on your patio that you’ve prepped for summer entertaining. Summer is too short of a season and you should take time to indulge and savour the little moments.
It’s also a great dessert to whip up with company or on the whim. All you need is a blender, I have a Blendtec, which is awesome. Total life changer and was more in my budget than a Vitamix. I bought a refurbished one at the time and was literally brand new.
I would say you can take the base of this recipe and blend any fruit and top it with ice cream or gelato of choice. Hmmmmm I think I know what I’ll be up to this weekend. Watermelon, berries, anything in season really. Check out what is in season at the local farmers market. Or just make my Pineapple and Coconut Gelato Float like you really want to…
P.S. For the adults, try adding some rum to it and make it a boozy float!
