peanut butter protein ballsThese peanut butter protein balls are a big hit in my house, Curtis and I both love how easy they are to make and how tasty they are to eat. They require no baking, just a little fridge time and voila you have three dozen protein balls to enjoy! I make them when I do my weekly meal prep on Sunday. And then I eat like two while I’m making them without fail.
peanut butter protein ballsYou see these in the stores, mostly sold in a package of one for $3! Who pays for that unless you are on a road trip or traveling and needed a healthy option. If not, then you are crazy my friend. My peanut butter protein balls can be an easy breakfast, a quick snack, a pop of protein before a workout, or even occasionally as a sweet dessert. You can do different combinations of these using Nutella, dried fruit, almond butter, the list can go on.

Once the mixture is combined, pop it in the fridge for  about 20 minutes.  This step helps make it easier to roll it into balls. Another option is to press the mixture into a baking dish lined with parchment paper and make energy bars instead.  Whatever sounds good to you!

In general, if you start experimenting with different ingredients or leave some ingredients out entirely of the recipe the state of it changes. They could get too dry,so then add a few more of the sticky ingredients like honey and/or peanut butter.  If they get too gooey, add in more of the oats.

Peanut Butter Protein Balls

Delicious no-bake energy bites that are the perfect healthy snack!

Ingredients

  • 1 cup dry oatmeal - I used quick oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter smooth or chunky
  • 1/2 cup ground flax seeds
  • 1/2 cup chocolate chips or cacao nibs optional
  • 1/2 cup honey or agave syrup - I used toasted coconut agave syrup for that extra flavour
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract

Instructions

  1. Stir all the ingredients in a medium to large bowl until completely mixed.
  2. Cover and let chill in the fridge for about thirty minutes.
  3. Remove from fridge and roll into balls of whatever size you prefer.
  4. Store in an airtight container and keep in the fridge for up to one week.
  5. Makes about 20-30 balls depending on size.
