Eating healthier has become a priority in my lifestyle in the last few months. I should clarify, Curtis and I have generally ate healthy, but after meeting with a dietician, I’ve learned my portion sizes were way off in some aspects. When I now go out to eat, I look at the menu differently or we share plates. But at home, during the work week, I want an easier option for a balanced meal. In my cupboard, besides canned beans and a selection of tea the size of a store’s, I have Seeds of Change rice and grain packets on hand.
So after sitting down with Jessica, my dietitian, we came up with a weekly meal plan. Being a huge rice lover, I could eat a bowl with a spoon no problem.
