Festive, terribly beautiful, and flavorful- these Blood Orange Ginger Cranberry Mojitos are a wonderful addition to your cocktail hour.
The flavors of orange, cranberry, and ginger are laced with mint and lime, and they all come together in an amazing combination of flavors that is distinctly holiday and not too sweet. Also can be easily made into a great mocktail.

A festive twist on a mojito with cozy cranberry and ginger notes!
In a small pan, combine the ginger, sugar, and water and bring to a simmer, stirring until the sugar is dissolved, about 2 minutes. Then set aside to chill. You can make this ahead of time.
Rub the rim of the glass with a lime wedge and then gently coat in brown sugar. Let dry as you get together the ingredients for the drink.
In the bottom of a highball glass, add the mint and lime wedge, 2 tablespoons of simple syrup, and use a muddler to smash them all together and release the mint oil and lime juice.
Add ice cubes, rum, and blood orange soda to fill the glass most of the way. Put a floater of cranberry juice on the top. You could serve as is (I love the look of the floater and the two different colors) or stir them together.
Garnish with fresh mint, cranberries, and candied ginger.
If you make the simple syrup ahead of time and keep in the fridge, this makes the mojitos easy to assemble for guests!
