The dressing is super tangy and light. It’s such a healthy salad to have instead of one with a dairy or fat based dressing. You can serve this up with beef or a pork dish or just eat it alone watching the latest Game of Thrones episode.
I’ll toast the sesame seeds in a big batch and keep in an airtight container. This way I can use them for many other dishes and are easy on hand. I love adding them to salads or using in baking or a meat dish. This cucumber scallion salad is so vibrant and gorgeous to look at. It was even better the next day when the flavours became more intense.
Make my chili oil to drizzle over top. This really gives it another depth of flavour with that slight spicy kick.
