December so far ❄️ But where has the time gone? I felt as if we put our tree up yesterday! Soaking in all the festive activities with the littles, Rowan this year is really into everything Christmas, it’s fun to see her excited! Even just lights on a house or the grocery store decor makes her smile.

🍊 FESTIVE BLOOD ORANGE CRANBERRY MOJITO 🎄

INGREDIENTS
• 1/4 cup fresh mint leaves
• 3 tbsp fresh lime juice
• 2oz white rum
• blood orange soda
• 1/4 cup cranberry juice
• ice cubes
• fresh mint, cranberries for garnish

GINGER SIMPLE SYRUP
• 1knob peeled ginger
• 1/2 cup water
• 1/2 cup sugar
• Sugared Rim
• 1 lime wedge
• brown sugar

INSTRUCTIONS
Ginger Simple Syrup
In a small pan, combine the ginger, sugar, and water and bring to a simmer, stirring until the sugar is dissolved, about 2 minutes. Then set aside to chill. You can make this ahead of time.

Sugared Rim
Rub the rim of the glass with a lime wedge and then gently coat in brown sugar. Let dry as you get together the ingredients for the drink.

For the Mojito
In the bottom of a highball glass, add the mint and lime wedge, 2 tablespoons of simple syrup, and use a muddler to smash them all together and release the mint oil and lime juice.

Add ice cubes, rum, and blood orange soda to fill the glass most of the way. Put a floater of cranberry juice on the top. You could serve as is (I love the look of the floater and the two different colors) or stir them together.

Garnish with fresh mint, cranberries, and candied ginger.

If you make the simple syrup ahead of time and keep in the fridge, this makes the mojitos easy to assemble for guests!
