Want to switch up your usual holiday cocktail this year? Try this coconut and lime-flavoured margarita on for size! It’s not often that tequila features in holiday cocktails. But this one is absolutely stellar!

Who doesn’t love a good margarita? (No one.) This classic cocktail is one of the most iconic in the world: it was invented in the 1930s and is even more popular today. I’ve made this cocktail in anticipation of our holiday trip to Palm Springs where I’ll be sipping it poolside. But if you’re not going anywhere sunny this year, this drink is perfect to manifest those tropical feelings.

How to Make Sugared Cranberries

In a medium bowl, toss cranberries with 1 tablespoon lime juice. Drain out lime juice, then toss with 2 tablespoons sugar. Pour onto a baking sheet to dry. Use these to garnish cocktails or even add to a festive tablescape!

How to make a salt rim

Of course, a perfect Christmas margarita needs a salt rim! Why is salt used in margaritas? Salt brings out the sweet and sour flavors in the drink. For the Christmas margarita, you could also make a sugar rim if you’d like! Just use superfine or granulated sugar and follow the instructions below. Here’s how to make a salt rim:

  1. Use kosher salt or flaky sea salt (not table salt! I repeat NO table salt). These types of salt are chunky and make for just the right texture on the rim.
  2. Take a lime wedge and cut a notch in the middle. Then slide it around the rim of the glass. This moistens the rim without having to use your fingers.
  3. Rim the outside edge only.Β Spread the salt on a plate in an even layer. Tilt the glass into the salt so that it sticks to the outside edge. Shake off any loose salt into the sink.

A festive, tropical Christmas margarita to serve up Christmas Eve!

Ingredients

  • 1 Can unsweetened coconut milk
  • 12 Oz silver tequila
  • 8 Oz triple sec
  • 1/4 Cup fresh lime juice
  • 4 Cups ice
  • Lime wedge, for rimming glasses
  • Sanding sugar or salt, for rimming glasses
  • Lime slices, for garnish
  • Cranberries, for garnish
  • Fresh mint, for garnish

Instructions

  1. Combine coconut milk, tequila, triple sec, lime juice, and ice in a blender. Blend until smooth.

  2. Rim glasses with lime wedge and dip in sanding sugar. Pour into glass and garnish with lime and cranberries.
